Professor

Food Toxicology Laboratory

Research Interests

Chemical contaminant residues in food (pesticides and veterinary drugs): pharmacokinetics and depletion studies of veterinary drugs in food producing species for human consumption; and the effect of processing and storage on residue levels of these toxic substances in food. Food additives (toxicological studies and exposure estimation). Toxic substances naturally occurring or formed during food processing (occurrence in food and exposure estimation). Development and validation of analytical methods for the determination of toxic substances in food by chromatographic techniques, coupled with mass spectrometry, fluorescence and diode array detectors.
